the horrors persist, but so do we, with the help of thrifting & burritos
Let’s dig into this week:
D | Delight — I grew up reading about Martha B. Rabbit’s adventures, alongside Peter Rabbit and Benjamin Bunny. Imagine the delight of the cottagecore girlie in me when I came across this vintage set of Beatrix Potter pop-up books on Facebook marketplace! We were on the hunt for a special gift for our friend’s baby’s birthday party & this was an obvious yes. I love thrifting unique gifts like this, and they were in pristine condition, basically like new condition. I hope to inspire our friend’s baby to become a big reader. :)
I | Intake & impact — The events of the world have been hanging very heavy in my heart, and I know I’m not alone. My friend wrote a piece that resonated with me this week, and I am sharing a quote below. Her words reminds us that our capacity for empathy does not have to be limited.
If we know suffering can be reduced, in any capacity, that should be the utmost priority, instead of debating who deserves help more, or coming to the conclusion that if we can't be perfect/solve all problems, why bother caring (hello, disillusioned Americans during the 2024 election)…or perhaps equal/worse, pitting two suffering parties against one another in a sick game (fuck you especially, Elon Musk)—something that has broken my heart over and over again when it comes to the online “discourse” about the people of Gaza and the Israeli hostages…as if we have to choose one over the other to care about. I hate the discourse and what it has become. I left my Model UN days behind in high school; I am simply not interested in debating the humanity of one group over another, regardless of region, in any capacity anywhere. My heart breaks for humanity.There are many humanitarian orgs doing important work that deserve support. Two groups I greatly admire and recommend donating to would be:
The IRC, in their tireless work in advocating for refugees worldwide, as Sudan continues to suffer from violence and displacement, the people of the Congo contend with chronic displacement and a health system on the verge of collapse, and many others. As the daughter of Vietnamese refugees, refugee communities will always be in my heart.
ALLMEP, in their critical grassroots efforts in building sustainable peace and self determination for Palestinians and Israelis. A daunting mission for the 170+ local orgs they partner with, especially now, but all the more important to continue, now…all the strength and support to peacebuilders on the ground from both communities.
G | Go-To — This week, I was totally exhausted after a packed calendar of family & friend events, and had little energy for meal prep. Luckily a month or so ago, past me was looking out for current me & prepped a huge batch of frozen burritos. These burritos are a reliable go-to for me for lunch on a busy work day, and remind me of my college days when I would subsist mostly on Amy’s burritos.
The filling is pretty simple: fat free refried beans, chorizo seitan, a sprinkle of vegan cheese. To add more freshness upon serving, I paired the burritos with some romaine & also extra chorizo seitan to meet my protein goals. I was also blessed with some homemade salsa from a friend, so that paired nicely with the burritos!
I also went to a few vegan events this past week, which I will be sharing more about in the coming days! I hope you are doing something rejuvenating for yourself today.
